Some may wonder if the tea is so good for one's health why the medical profession or drug industry is not recommending or marketing it. One reason is that it takes tens of millions of dollars to scientifically test a product before it can be marketed by the medical industry. They are not willing to spend the money if they cannot see a dollar return on their investment, the Kombucha lichen reproduces weekly, for free, making it a poor candidate for a profitable return. One such false "death" rumor started in Iowa back in 1995 when two elderly women became "mysteriously" ill (as reported by the local newspaper and quickly picked up by the national press). Both were found to have been drinking Kombucha Tea and the local town paper immediately offered the wild speculation that there illness were related to drinking this "strange tea". The fact that a lot more people in the same town were also drinking the tea and were not getting mysteriously ill seems to have slipped their notice. One of the women died and the other was released, both the CDC and the FDA investigated the "mysterious illnesses" after it was called to their attention by exaggerated press releases. Both found that each of the two women had medical conditions that were not mysterious at all and were totally unrelated to their consumption of Kombucha tea. However to this day you will still see Internet warnings about drinking Kombucha tea that reference this incident.
Another false rumor on the Internet about Kombucha states that Kombucha may produce anthrax. This is an absolutely ridiculous statement. The source of this false statement originates with an unsubstantiated report out of Iran that an isolated batch of Kombucha tea somewhere in Iran had been found to have anthrax in it. If this is true then the tea somehow became contaminated with anthrax, it certainly did not produce it. 2. Glass Jar - A gallon glass jar, or smaller if you wish to make less than a gallon of tea. Old gallon pickle jars work well and can be obtained for free from a local Deli. They usually just throw them out. Any glass container can be used, even old fish bowls. Plastic or metal containers should not be used to brew or store the tea in. You will also need some glass bottles to store the tea you will be drinking, old gallon wine bottles work well.
3. Tea - Kombucha is made using regular tea. Six to Eight regular size tea bags to a gallon of tea. Black tea, orange pekoe tea, green tea, earl gray tea, can all be used to make a delicious Kombucha tea.
4. Sugar - Real Sugar must be used. Kombucha is a fermented tea and sugar is needed for the fermentation of the tea. Artificial sweetners will not work. Different types of sugars can be used, raw sugar, regular white sugar, brown sugar, etc. etc. the tea can even be made using honey. Most all of the suger used will be used up in the fermentation of the tea and by the newly forming mushroom that will grow on the surface of the tea.
5. Vinegar - Apple cider vinegar or regular white vinegar. A small amount of vinegar is used to initially adjust the pH level of the tea for better fermentation.
6. Coffee Filters - Coffee filters or paper towels to cover the brewing jar while it is fermenting and a rubber band to secure the covering.
